The word 'Callalloo' originates in the cosmopolitan two-island nation of Trinidad and Tobago, West Indies. It is a dish made of several ingredients: dasheen leaves, crab meat, scallions, thyme, onion, garlic (optional) salted beef (optional) and okra, boiled together with salt and hot pepper, producing a uniquely delectable dish of blended flavors that can be served over steaming boiled basmati rice, or rice pilaf.

Callalloo Express TV Show was so named by the show's host/producer a native of Trinidad, due to the similarities to the Callalloo dish to draw from a vast array of contributing components, and deliver a derived blend of programming that distinguishes itself by the variety and richness of content that is entertaining and educational to viewers.
